Simple Roasted Chickpea Snack

Ingredients
  

  • 1 tin chickpeas
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • freshly ground black pepper

Instructions
 

  • Preheat the oven - set your oven to 200 degrees Celsius
  • Prepare chickpeas - drain and rinse the chickpeas. Pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
  • Prepare the seasoning mixture - In a large bowl, combine the olive oil, cumin, smoked paprika, coriander, garlic powder, salt, and pepper. Mix well to form a spice mixture.
  • Coat the chickpeas - add the chickpeas to the spice mixture and toss until they are evenly coated.
  • Spread on Baking Sheet - spread the seasoned chickpeas in a single layer on a baking sheet. Ensure they are spread out and not crowded to allow for even roasting.
  • Roast in the Oven - roast the chickpeas in the preheated oven for about 20-30 minutes or until they become golden brown and crispy. Shake the pan or toss the chickpeas halfway through to ensure even cooking.
  • Cool and Enjoy - once done, remove the chickpeas from the oven and let them cool for a few minutes. They will continue to crisp up as they cool.
