Kachumber Salad

- 1/2 red onion, finely sliced
- 1/2 cucumber, deseeded and chopped
- 3 tomatoes, roughly chopped
- juice of half a lemon
- 1/2 tsp chilli flakes
- 1/4 tsp cumin
- 1/4 tsp ground coriander
- 1 handful fresh coriander, chopped
- salt and pepper
Mix the onion, cucumber and tomato in a bowl
Add the lemon juice, chilli flake, cumin, ground coriander, fresh coriander and some salt and pepper to taste
Mix well and adjust the seasoning if necessary
