Take the salmon out of the fridge and let it come to room temperature for 10 minutes. Heat oven to 180 degrees C.
Line a large baking tray with baking (parchment) paper and place your salmon on top. Sprinkle the salmon with the dried herbs and garlic slices. Season with salt and pepper. Arrange the lemon slices on top of the salmon and drizzle with the olive oil.
Place the salmon in the oven and bake for 15 minutes, then check the thickest part of the fish to see if it is cooked through. Cooking times will vary depending on the thickness of the salmon. If necessary, place the salmon back in the oven for another 3-4 minutes then check again.
When the salmon is done, leave it at room temperature for a few minutes, then slice into portions and serve immediately.
