Easy Homemade Granola Clusters

Ingredients
  

  • 4 cups rolled oats (320g)
  • 1 cup walnut pieces (100g)
  • 2 tsps ground cinnamon
  • 1/4 tsp salt
  • 4 tbsp vegetables oil (60ml)
  • 1/2 cup maple syrup (120ml)
  • 1/4 cup dried cranberries
  • 1/4 cup goji berries

Instructions
 

  • Preheat: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Mix: In a large mixing bowl, combine the rolled oats, salt, cinnamon and walnuts. Add the maple syrup and vegetable oil and stir well until all the oats are evenly coated.
  • Spread onto baking tray: Tip the mixture onto the prepared baking tray and press down in one even layer.
  • Bake: Transfer the baking tray to the preheated oven and bake for about 25 minutes, or until the granola looks golden brown and crisp.
  • Cool: Remove the baking sheet from the oven and allow the granola to cool completely on the baking sheet. It will firm up as it cools.
  • Form clusters and add fruit: Once completely cooled, gently break up the granola with your hands so that it forms clusters. Sprinkle the dried cranberries and goji berries into the granola.
  • Store: Store the granola clusters in an airtight container at room temperature until you are ready to serve it.
