Chicken Fajitas

Ingredients
  

  • 4 chicken breast, sliced into strips
  • 1 tbsp vegetable oil
  • 2 peppers, sliced
  • 1 onion, sliced
  • 2 tsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tsp mild chilli powder
  • 8 wholemeal tortillas
  • Hummus - shop bought or homemade
  • 1 avocado, sliced
  • 1/4 cucumber, cut into sticks
  • 1 can of sweetcorn, drained
  • 1 can of black beans, drained

Instructions
 

  • Heat the oil in a large frying pan and add the chicken, smoked paprika, chilli powder, garlic powder, peppers and onion. Fry for around 7-8 minutes and season with some salt. When the chicken is cooked through transfer to a serving bowl.
  • Serve everything on the table in separate bowls/plates and let everyone help themselves and fill their own fajita wrap however they want.
