Why you should make this

This recipe is:

  • Vegan
  • Gluten free
  • Dairy free
  • Very easy to make

Variations

The spice combinations are endless. You can add any that you like, for example:

If you like your chickpeas spicy hot, then try adding some cayenne or chilli powder.

If you want an Indian spiced flavour, try adding your favourite curry powder.

If you want to keep it simple, try garlic powder and salt which is also delicious.

What to eat with roasted chickpeas

These taste great as a snack on their own or can be tossed into any salad for added protein.

Give your sweet potato hummus a glow up by sprinkling some roasted chickpeas on top.

Or serve them with chicken fajitas or lamb koftas.

FAQs

How long will roasted chickpeas keep fresh?

It’s best to eat these on the day that you eat them. They can be stored for a couple of days but will lose their crunch, especially if you put them in the fridge.

Are chickpeas good for you?

Chickpeas are an excellent source of fibre, protein and vitamins and minerals such as zinc, iron, magnesium, folate and vitamin B6.

Are chickpeas soaked before cooking?

Only soak chickpeas if they are dried. These need to be soaked overnight before cooking. Tinned chickpeas are already cooked and can be used straight from the can with soaking.

Are chickpeas fattening?

Chickpeas are not low in calories so it’s important to use portion control when eating them.

However they are high in fibre so will keep you fuller for longer and they are also nutrient dense which means you get a lot of vitamins and minerals in a small amount.

One portion is around half a cup.

Ingredients

Chickpeas – I use tinned chickpeas

Olive oil – I like to use extra virgin olive oil for flavour and nutrient content

Ground cumin – adds a great depth of flavour

Ground coriander – the ideal partner for cumin

Smoked paprika – this is one of my favourite spices to add a lovely smokey note

Garlic powder

Salt and pepper

  1. Preheat the oven – set your oven to 200 degrees Celsius
  2. Prepare chickpeas – drain and rinse the chickpeas. Pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
  3. Prepare the seasoning mixture – In a large bowl, combine the olive oil, cumin, smoked paprika, coriander, garlic powder, salt, and pepper. Mix well to form a spice mixture.
  4. Coat the chickpeas – add the chickpeas to the spice mixture and toss until they are evenly coated.
  5. Spread on Baking Sheet – spread the seasoned chickpeas in a single layer on a baking sheet. Ensure they are spread out and not crowded to allow for even roasting.
  6. Roast in the Oven – roast the chickpeas in the preheated oven for about 20-30 minutes or until they become golden brown and crispy. Shake the pan or toss the chickpeas halfway through to ensure even cooking.
  7. Cool and Enjoy – once done, remove the chickpeas from the oven and let them cool for a few minutes. They will continue to crisp up as they cool.
