You’ll love this tasty, healthy, quick, mid-week dinner that is guaranteed to please everyone.

Chicken fajitas

Why you should try this recipe

  • Great for picky eaters as it’s a mix and match meal. For more meal ideas check out my post on picky eaters
  • It is a balanced meal that’s low in fat and packed full of vitamins with all those veggie extras.
  • It’s ready and on the table in 30 minutes.
  • Any leftovers can be kept in the fridge and used in salads or more wraps the next day.

Variations

  • Serve with rice or gluten free tortillas to make this recipe gluten free.
  • Use roasted courgette and aubergine, tofu or halloumi instead of chicken to make this vegetarian.
  • Swap the chicken for prawns or beef strips.

Basic Ingredients Needed

  • chicken breast, sliced into strips
  • vegetable oil
  • peppers, sliced
  • onion, sliced
  • garlic powder or fresh garlic
  • smoked paprika
  • mild chilli powder
  • 8 wholemeal tortillas

Added extras

I usually place a bottle of Sriracha sauce on the table for those that want an extra hit of chilli and I like a bit of sour cream in mine too. You can change the “extras” that are on the table depending on what your family enjoys. Here are some additions to try:

grated carrot
lettuce
raw spinach
corn on the cob
roasted veg
sliced avocado/guacamole
tinned black beans
chickpeas
salsa
mayo
different kinds of hummus
jalapeño chillies

Step-by-Step

First, heat the oil in a large frying pan over a medium heat and add the chicken, smoked paprika, chilli powder, garlic powder, peppers and onion. Fry for around 7-8 minutes and season with some salt. When the chicken is cooked through transfer everything to a large serving bowl.

Ingredients
  

  • 4 chicken breast, sliced into strips

  • 2 peppers, sliced
  • 1 onion, sliced
  • 2 tsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tsp mild chilli powder
  • 8 wholemeal tortillas
  • Hummus – shop bought or homemade
  • 1 avocado, sliced
  • 1/4 cucumber, cut into sticks
  • 1 can of sweetcorn, drained
  • 1 can of black beans, drained

Instructions
